National Game Week

Venison Chilli- Serves 4-6

Ingredients

  • 1kg Venison Mince
  • 1 Red Pepper
  • 1 Red Onion
  • 400grams Chopped Tomatoes
  • 2 Cloves of Garlic
  • 500mls Water
  • 1tsp Ground Cumin
  • 1 ½ tsp Smoked Paprika
  • 1 tsp Ground Cinnamon
  • ½ tsp Chilli Powder
  • 2tsp Coco Powder
  • Salt & Pepper to season
  • 100grams Sugar

Method

  • Cook the Venison mince until golden brown.
  • Separately toast all the spices except the coco powder for five minutes, turning occasionally.
  • Blend the garlic and chopped tomatoes, place in a pan with the Venison mince and water, then add the toasted spices and simmer for 45 minutes.
  • Peel the red pepper and red onion, cut into 1cm dice and sauté gently, when the mince is finished cooking add the pepper and onion, stir in sugar and coco powder.

 

Game Stew – Serves 4-6

Ingredients

  • 1kg diced game
  • 2 Carrots
  • 2 Celery Sticks
  • 100grams Button Mushrooms
  • 2 Cloves of Garlic
  • 5 Sprigs of Thyme
  • 5 Juniper Berry’s
  • 1 Star anise
  • 100grams Plain Flour
  • 500mls Chicken Stock
  • 500mls Beef Stock
  • 500mls Red Wine

Method

  • Dust the diced Game in the flour and roast in a pan until golden brown.
  • Add vegetables and cook for 5 minutes, deglaze with the red wine.
  • Add, star anise, crushed juniper and picked thyme, cook for 2 minutes.
  • Then, add the stocks, bring to a boil and simmer for 45 minutes, or until nice consistency.
